FRANKENSTEIN TOAST: A Frightfully Fun and Healthy Halloween Meal!

Fact #1 about me: I'm a Halloween Psycho! I love everything Halloween. It's beyond obsession at this point. It's more like neurosis. Halloween is all year round in my head. I need serious help. Now don't misunderstand me, I don't want help. I'm totally cool with Halloween consuming me and I'm not looking for a cure anytime soon. But I most definitely need help.
When I met Jay, he didn't like Halloween. It was almost a deal breaker. I mean, how the hell do you not like Halloween? I get it if you don't love it or don't participate in it once you're an adult, but to not like it? This shit is unacceptable. Since I was madly in love with this Halloween hating weirdo, I had only one choice. I had to shove Halloween so far down his throat that he'd eventually swallow it. Oh and did I ever. I poured it all over his life. Every year I forced him to start dressing up, I decorated our house like it was a scene right out of Halloweentown, and I coerced him into watching Hocus Pocus with me every season while we carved pumpkins. We even started an annual Halloween adult scavenger hunt for our entire community. This year will be our ninth year!
Can I just say that I do realize that this poor bastard deserves awards for handling my monster-loving ass all these years? But I'm proud to say that after 17 years, he's officially a fan! And when he saw this Frankenstein chicken salad toast, even he was excited about eating it!
But no one was more excited than my Jossy. She's nine, loves all things art, and is a huge fan of Halloween just like her mama. She helped me create this yummy Halloween chicken salad toast. I've never seen her so excited to sit down and eat a meal! This edible craft will make even the pickiest of eaters eager to clean their plate. We had so much of a blast making Frankie that we decided we needed to make his wife. The famous Bride of Frankenstein!
OMG it was so fun! It was really easy too. Jossy did most of the decorating.
Let me tell you the story of how Frankie and his woman ended up on our dinner plates. A few days ago I posted my Avocado and Grape Chicken Salad recipe.
I mentioned in the article that I could not stop eating it. Yup, I'm still obsessed with it. Omg so good. Anyway, let me explain why this has to do with Frankie and his bride.
Fact #2 about me: I can't ever leave well enough alone. Yesterday when I was eating more chicken salad (seriously, I've been eating it for every meal!), I had a crazy wonderful idea! You see, every October I try to come up with fun Halloween-y foods for my Littles. Okay, you got me... they're for me too. So it instantly hit me that if I put the chicken in a food processor instead of shredding it, I could easily spread it. Aaaaand since it's green, it would make for a spectacular monster-y meal for my girls. So who's the most famous green monster that we all know? No, not the Hulk. He's not Halloween-y, silly. Yes, you guessed it! Frankie baby! Oh how I love Frankenstein. Is it weird that I've reread Mary Shelley's Frankenstein a dozen times? Nope. Not weird, just awesome :)
Fact #3 about me: I totally get off on anything crafty. I love getting my creative juices flowing and digging into a new project. So this recipe hit two of my loves, crafting and food! Doing crafts makes me feel like a kid again and it brings me joy. It's an added bonus that my kids reap all the fun and family bonding time that comes with working on crafts, projects, and fun food recipes all the time. By the way, don't ever go to a craft store with me because you'll be there forever. And if you do come, don't you dare tell my husband how much I spent!
Okay back to Frankie and his bride! I mean can you get any cuter than this?
Okay, here's how the rest of this article is going to go. I'm going to tell you exactly how to decorate your Frankenstein and Bride of Frankenstein toast first. Then I'll give you the recipe for the chicken salad last. Don't worry, I provide you with printable instructions for Frankie and his lady as well as a printable recipe for the chicken salad.
I want to mention here that this recipe is not just for making our two most iconic green Halloween monsters. This recipe is amazing if you just want a new yummy chicken salad recipe to try! This recipe is good all year round, no matter what the season! I mean who doesn't love a delicious chicken salad sandwich?
Another really yummy way to eat this stuff is with chips!

WHATCHU NEED: (To make both Frankie and his bride)
Avocado & Grape Chicken Salad (see recipe below)
Toast
Large Whole Black Olives
Sliced Black Olives
Sliced Provolone Cheese
Slivered Almonds
Red Apple
Celery Rib
WHATCHU DO FOR FRANKIE:
1. Spread chicken salad thickly on a slice of toast. I used the back of a plastic spoon and used my fingers to help mold it perfectly around the edges.
2. Line up a row of vertical almond slivers for the mouth.
3. Cut a whole olive in half width-wise for the eyes. Place them rounded part down.
4. Cut the sliced olives in half. You'll end up with olives in the shape of Cs. Flatten them out and line them up vertically for the hair.
5. Cut small pieces of celery for the bolts in his neck.
WHATCHU DO FOR THE BRIDE OF FRANKENSTEIN:
1. Spread chicken salad thickly on a slice of toast. I used the back of a plastic spoon and used my fingers to help mold it perfectly around the edges.
2. Cut a thin slice of apple. Use your kitchen scissors and cut the piece of apple into the shape of lips. Place it where you want the mouth to be.
3. Cut a whole olive in half length-wise for the eyes. Place them rounded part down. Then cut small ovals out of the provolone cheese to place inside of olives. To complete the eyes, snip a little piece of sliced olive to make the iris. Place it on the provolone ovals.
4. Cut the sliced olives in half. You'll end up with olives in the shape of Cs. Then cut those in half length-wise. These will be the eyelashes.
5. Arrange the slivered almonds to look like stitches. You can easily snap the slivers with your fingers to make the exact lengths that you need.
6. Cut wavy long lines out of the provolone cheese. These will be the 'white' streaks in her hair. Place them where you want them to be.
7. Cut whole olives in half length-wise. Place along the provolone strips. These will be the 'black' streaks in her hair. You can trim the olives with the scissors to make them fit perfectly.
AVOCADO & GRAPE CHICKEN SALAD
(Food Processor Version)
MAKES 6 CUPS
WHATCHU NEED:
4 Cooked Chicken Breasts (about 2 lbs of skinless boneless chicken breasts)
2 Avocados
2 cups of sliced green grapes (the sweeter the better!)
3/4 of a 10 oz Box of Frozen Chopped Spinach, thawed and squeezed
1/2 cup of Plain Greek Yogurt
1/2 cup of Light Miracle Whip (or mayo if preferred)
1/2 cup finely diced Celery
1/4 cup finely diced Onions
WHATCHU DO:
1. Cut your cooked chicken into large chunks to make it easier to process.
Note:
I'm sure everyone has their own way of baking chicken. However, I bake my skinless boneless chicken breasts at 400 degrees for 30-35 minutes. They come out perfect every time.
2. Put chicken in food processor and mix until finely pulverized.
Depending on how big your FP is, you may need to do this in two steps, pulverizing half of the chicken at a time.
3. Seed and scoop out your avocados.
4. Add your avocados to the FP and mix with your chicken.
5. Put your chicken-avocado mixture in a med-large bowl and set aside.
6. Now combine your Greek yogurt, miracle whip, and spinach in the FP.
7. Dump your chicken-avocado mixture into the FP with your just mixed spinach-yogurt mixture. Mix until well blended.
8. Put back in bowl and set aside.
9. Fold in grapes, celery, and onions. Mix well.
I cut my grapes lengthwise and then slice them.
VOILA!
Now you can go make your super-cool-super-fun-super-yummy-super-healthy Mr. and Mrs. Frankenstein...
OR
You can simply go make some delicious healthy sandwiches or scoop up some of this goodness with some blue corn chips!
